Place all ingredients, except eggs, in the blender or food processor and whip until batter is smooth. Add eggs and pulse a few times. Add fruit and gently mix them in with a spoon. Do NOT blend! Spray bottom of pan with cooking spray or lightly cover with oil. Pour batter into pan and place in pre-heated oven to 350 degrees. The suggested time for cooking is approximately 30 minutes. Check frequently to be sure the cheesecake does not brown or dry out. Serve hot from the oven or chill in the fridge.
