Apple Flapjacks (Vegetarian, Breakfast)

    • 3/4 cup sifted flour
    • 1/2 tsp. baking powder
    • 1/4 tsp. cinnamon
    • 1 1/2 tsp. vegetable oil
    • 1 1/2 tsp. sugar
    • 1/4 cup egg substitute
    • 1 cup apple, finely chopped
    • 1/2 cup skim milk
    • Nonstick vegetable cooking spray
Sift flour with baking powder and cinnamon. Mix oil, sugar, egg substitute and apple. Combine wet and dry ingredients, gradually adding in milk. Spray a nonstick griddle with vegetable spray. Bake flapjacks on griddle as for pancakes. Sprinkle with brown sugar substitute if desired.
