Apple Salad Mold

      •     1   3-oz. sugar-free cherry Jell-O (or any flavor)
      •     1   cup boiling water
      •     1/2 cup    apple juice
      •     1/2 cup cold water
      •     1   medium unpeeled apple, chopped (about 1 1/2 cups)
      •     1/2 cup chopped celery


Put dry gelatin in a medium bowl. Pour in boiling water; stir for 2 minutes. Combine juice and cold water. Add to gelatin and stir. Refrigerate until slightly thickened. Add apple and celery. Mix well. Refrigerate until set.
