Banana Muffins

Banana Muffins
  • 1 egg
  • 3 tbsp. vegetable oil
  • 1/4 c. nonfat milk
  • 1 1/3 c. mashed bananas
  • 1 c. whole-wheat flour
  • 2 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/8 tsp. salt
  • Nonstick cooking spray

Preheat oven to 400° F. Spray muffin pan with nonstick cooking spray. In large bowl, beat together egg, oil and milk. Stir in bananas and set aside. In separate bowl, combine flour, baking powder, baking soda and salt; mix well. Stir into banana mixture until flour is moistened. Fill muffin cups each 1/2 to 2/3 full; bake 23 minutes or until tops are lightly browned. Let cool 15 minutes before removing from pans. Serves 12.
