Bean and Salsa Salad

Number of Servings
      • 1/2 cup cooked red kidney beans
      • 1 1/2 ounces shredded pepper jack cheese
      • 1/2 cup finely chopped red onion
      • 1/4 cup salsa
      • 1 tsp. fresh lime juice
      • Spinach leaves
      • 2 tbsp. reduced fat sour cream
      • 1 tsp. minced fresh cilantro


In small bowl, combine red kidney beans, shredded pepper jack cheese, red onion, salsa and fresh lime juice. Line plate with spinach leaves; top with bean mixture, reduced fat sour cream and cilantro.
