Broccoli Salad

Broccoli Salad
  • ¼ cup mayonnaise
  • ¼ cup low-fat plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon sugar
  • ¼ teaspoon ground pepper
  • 2 cups chopped broccoli (florets and peeled stems)
  • 2 cups chopped cauliflower
  • ½ cup shredded sharp Cheddar cheese
  • 2 slices cooked bacon, chopped
  • ¼ cup finely chopped red onion

 

Whisk mayonnaise, yogurt, lemon juice, sugar and pepper together in a large bowl. Add broccoli, cauliflower, cheese, bacon and onion; stir to coat. Serves 8

  2. I swap the bacon for walnuts & golden raisins.
