Lemon Brownies

Lemon Brownies
  • ¾ cup flour
  • ⅔ cup sugar
  • ¼ cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 3 large eggs
  • 3 tablespoons lemon juice, divided
  • 1 tablespoon lemon zest plus 1 teaspoon, divided
  • ⅓ cup packed confectioners’ sugar

Preheat oven to 350 degrees F. Coat an 8-inch-square baking dish with cooking spray. Beat flour, sugar, butter, vanilla and salt in a large bowl with an electric mixer until combined. Add eggs, 2 tablespoons lemon juice and 1 tablespoon zest; continue beating until smooth. Pour the batter into the prepared baking dish. Bake until a toothpick inserted in the center comes out clean, 20 to 22 minutes. Cool completely. Meanwhile, whisk confectioners’ sugar and the remaining 1 tablespoon lemon juice and 1 teaspoon zest in a small bowl. When the brownies are cool, spread the glaze over the top. Serves 16
