
- 2 cups oatmeal
- 1 cup flour — unbleached
- 1 cup dark brown sugar — firmly packed
- 1 tablespoon baking soda
- 1/2 cup unsalted margarine — (melted)
- 1 cup pecan halves — cut into 1/4″ pieces
Preheat the oven to 375° F. Butter an oblong baking pan; 11×7 or 12×8. Mix together the oatmeal, flour, sugar and baking soda until well blended. Pour the melted margarine over the dry ingredients and mix until moistened throughout (mixing with the hands work best). Layer half the oat mixture over the bottom of the pan. Top with a thin layer of diced pecans pat into place the remaining oat mixture to form a top layer. Bake on the middle shelf for 20 minutes. Cool on a wire rack before cutting, do not remove bars from the pan until they are cooled enough to hold together. Store the bars in a covered tin with wax paper between layers. Serves 24
